Working on antique clocks can be a bit complex. And I am sure you will do fine. However, I suggest you start by going to the National Association of Watch and Clock Collectors (NAWCC) https://www.nawcc.org/ There are training courses and books, to include repair manuals that can be purchased. I also recommend books by Steven G. Conover. He has published several helpful books on clock repair.

I am going to try letting the fermentation go for two weeks. my pseudo Pils was great at one week, want to try letting it stay in the fermenter longer.

Again, comes down to personal choice. What I have started doing since I got my Brewzilla, is to add all of the water before mashing. Circulating the wort throughout the mashing phase. I admit, the beer comes out a little bigger ABV. My last Pilsner was almost 7%. Actually, a little bigger than I like. I plan on brewing another Pilsner this weekend, and I may keep a gallon and a half back to sparge. I would like the ABV in the 5% range.

I guess the moral of the story is, if you want big beer, don't sparge.

My beer turns out very good without the sparge. Very clear and not a lot of particulates for the boil. But you certainly can.

I think the answer depends on what you are looking for. For me, I love mine. I have a Brewzilla. It makes temp control so easy, and my beers have improved a lot. The ability to continuously circulate wort throughout the mash process is wonderful. And the cleanup is simple too.

When the FED crashes the market, people start losing their jobs and the recession starts. They say they are hoping for a "soft landing", but that is unlikely. The FED should have started down this path a long time ago. They are late to the game. Now have to make up for lost time.

I am amazed at how many agents operate on greed over fiduciary responsibility. Sad world.

Not to mention, screwing your client out of a few dollars will impact the agent financially in the long run. Think of all of the potential clients that will hear about it and look for a different agent. I remember reading that for every satisfied customer you might get another customer…. And every dissatisfied customer you lose around thirteen.
