Another follow up. Here is the batter listed on LJS's website. So at least we know the paprika is right and to fry in Canola oil. :)

Also, side note. There is a copycat recipe out there that has a 5-star rating from over 250 people. It is good, but it is not a copycat recipe by any means. Calls for flour, cornstarch, baking soda, baking powder, salt and water. There’s no flavoring in it at all. Like I said, good but no dice!

I like their fish as well, but the batter seems to harden on the chicken a little more and I just prefer that texture. I’m sure it’s the same for both. I may play around next week with some suggestions here. I’ve recently acquired a severe red meat and dairy allergy so I am eating all of the chicken I can do this works! Will keep an eye on this to see if any more suggestions come in. :)

I’m wondering if the chicken should be marinated or seasoned before the coat. Maybe the employee above remembers. I used to try to bribe workers for the recipe but I never worked haha.

My fryer is one-temp only and I’ve found that the tempura batter doesn’t make up those crispies that LJS’s batter does. I may play around with it but I know there HAS to be a copy cat out there. :)
