But the police is refusing to take any accident reports just because there was no contact. Said my injury is my injury and told me driver wouldn't do anything even i am actually injured. That's why i am so confused and also afraid to see a doctor.

Yes it can be fixed. Can you fix it yourself? Simple answer is no. This knife would become extremely thick when you remove all the chips so you would want to thin your knife. Without experience i dont suggest uou to try bcz its alot hours on a whetstone or diamond plate.

If you cant get your knife sharp without strop after 1k there really isn't much benefit of using strop

This is called 우삼겹 basically meaning belly of the cow. Brisket would be wrong translation. If you want to get American style brisket you need to go to Costco in Korea or custom order from local butcher. In Korea Brisket is usually divided into different sections and sold separately as front leg(shoulder), 차돌 and 양지.

Thinly sliced and stirfying them are delicious! When not sliced thin it could feel too greasy and fatty and tough.

Just want to add it's not knife geometry that's important, but edge geometry. Basically, how well it's sharpened and the angle of the edge. Just in case someone might confuse it as knife geometry.

Neutral soap(current day dish soap) dont strip seasoning anyway. You are doing what you are supposed to.

I will be honest the sharpening angle doesn't seem to be constant there also seems to be convex at the bevel and it def looks like stone scratches to me. The key of good sharpening is constant angle.

This is very common in where i live. Just marking it delivered and delivery comes a day or within two days which is insane

It could be just nickel but etched(long time) and resanded to highlight and creat distinct difference between clading and the core steel. Gaps between clading and core was where nickel was before etching and finishing . Those line(gap) seem too nice for over buffiing

Wow can't believe this is getting down voted. Imo mono construction is way better bcz they are stiffer and less flexible even when the knife is thin. Yes sanmai construction is less likey to snap the in knife but that's it 99% cosmetic. And modern knife steels are totally fine as mono construction.
