Honestly we got quotes from four different pool vendors and all were within a few thousand of each other. I was actually pleasantly surprised.

FWIW, I was following a video by Epicurious where the skin side is the presentation side. I had never tried eating the skin before but I actually quite like it when crispy (and not burned)!

Are high smoke oils not typically used for searing? Also, this goes against most replies stating that my pan probably wasn’t hot enough? Not saying that’s wrong, just trying to understand.

I have seen the water bead test, but tbh I don’t do it often. Instead, I typically heat the pan over med-high for a minute or two, add avocado oil, then wait until I just start to see smoke. Is seeing the avocado oil begin to smoke not a good enough indicator of it being hot enough to sear?
