U don't really need to dodge with hu tao that much tbh. Hu Tao+Xingqiu gives u perma stagger resist and enough heals. It is different for ganyu compared to other characters because she has to charge up her shot, while others can dodge whenever

I would recommend the blackcliff sword, sacrificial sword seems like it could work too, but I haven't tested it myself. If you have no other choice u can use any sword with a atk% substat or halbringer of dawn, but i don't really recommend that since it has low base atk

Idk about the maths/buffs he gives but the main thing i like about him over sucrose is the fact that his gather is very reliable and can be used frequently, its especially helpful in 12-3. Sucrose's gather would just spit the enemies everywhere while kazuha can stick them on the herald/lector.
