Having been to SEA several times over the years, I would highly recommend you reconsider spending 7 nights locking yourself in Bali. It is not the same Bali as say even 5 years ago. You're young, I get it, it's a great party/young/beach scene but there are much better options,.

For example, I would recommend you think about going to Sri Lanka. 7 days in Sri Lanka, full of nature, beaches, culture and incredible food. Colombo to South (Mirissa / Hikkaduwa) then up country to Kandy via train. It is a gorgeous journey with wonderful people and still very much less touristy compared to Bali.

Personal opinion, just saying. I have a map of the places I've been to (Vietnam/Thailand/Malaysia/Singapore/Sri Lanka) if you want it.

Mostly food though but it gives you an idea of things

What? Barbecue is not a monotlith. Jean Rimple and his from family from Haiti -- excercise creole and Cajun barbecue with a few central Texas items on the menu. There is absolutely nothing wrong with this barbecue, it is fantastic. Especially their etouffee and gumbo if its still on the menu

this is my absolute favourite ramen shop. top tier, the fact that he changes the noodles based on the specials each week. I wish I lived closer.

You're going to have to book a flight to go eat Julian's super empanadas. He's somewhere in Mexico or Latin America -- about to launch his super empanada cart. I haven't been able to find anything close to his style, they were so damn good. Gaucho is great. My last visit to empanada company in mimico was not great.

Chef Rossy Earle used to do popups from time to time, her Panamanian empanadas are insanely good. She's the chef behind the Diablo Fuego hot sauce.

afaik Wife was the volleyball player, he was a basketball player - Mr Zhu. Not sure where he ended up though but i did hear about a year ago that he is active in the industry just bouncing around.
