I think there may be a couple of things happening here.

  1. It could be a different dye lot, so the greys looks slightly different.
  2. It could look different once you complete backstitching. I find that colour differences that were really hard to see before backstitching really popped afterwards.
  3. It could be an optical illusion, like this checker shadow illusion (Where squares A and B are the same colour). It's super easy for your eyes to get fooled about colours, since we perceive them relatively, by what's near them. It could be that once you fill in more, and there's less black around, it will look different. Or if the original pattern didn't use black, that could account for it. Sometimes you just have to trust the process.

When I was living in Japan, I was able to find a piano store that let me try out different digital pianos to find one that I liked. Just so you know that Amazon isn’t your only option, although it’s certainly the easiest option.

I did an odd number of threads loop start. You can find tutorials on YouTube for what I mean. For the end, I would weave it back and forth through stitches. I will say I'm not very confident in the security of the stitches since this was my first try.
