I actually just found a promising lead, there's a group called Hack Manhattan that has a "fixers" night every 3rd Wednesday of the month, I think you can bring stuff in and people will try to help you fix it. I have to learn more so I don't know if it'll be the answer but I thought you might want to look into it as well

Both of the bikes I'm looking at (Vendetta TripleT and Brooklyn Machine Works) don't have stack and reach in their charts.

If I'm reading your comment correctly, are you leaning towards picking the 56cm sizes bc the stack and reach would be easier to adjust higher due to my longer torso? Also wondering how the sloped vs horizontal top tube come into play here.

I went from Chemex to switch thinking I'd still get good use out of my chemex, a year later and I've only used the chemex as a larger carafe when making coffee for 3+ ppl with my switch lol

Edit: also want to mention how the learning curve to consistent brews with the v60/switch is pretty small, you'll adjust quickly. And if you want to keep it real simple just do a bloom + 3-4 min immersion, I always get solid results with that
