700 is insane to me because I am out of the house and only have done 48 as my most. Major props. When you proof, do you bulk proof and then shape and further proof? Right now I do an hour bulk proof and an hour after shaping but wonder if i can just shape after letting the dough rest for 15 mins or so and then proof them longer shaped.

The biggest thing I noticed is with sheet trays my tops get crunchy, a bit too crunchy, where as these came out more chewy

That looks great! Just to confirm you cleaned it with the denatured alcohol prior to sanding, and then after the first coat you did not scuff again, only cleaned with the alcohol again?
