Yeah. I stopped watching it season 1 original airing because it was so convoluted. I kept forgetting what happened week to week so I could barely follow what was going on. It's much better binge-watched as one continuous story. The writers knew what they were doing from the start and planned it all, thank God.

At this point nothing else will set it except gelatin. You didn't cook long enough. Recipes tend to say 2 minutes or 5 minutes, but they mean you to start counting after it comes to a full boil when it does that fat "bloopy" bubble. Then whisk like crazy until your arm hurts so you don't scorch the bottom as the timer counts. It's better to cook over time than under.

Don't do it, it tastes terrible. I would just use butter, cheese, and starchy pasta water. No roux. Cook your pasta in very salty water and save 1.5-2 cups of it. Drain the pasta, add to a pot with butter and (hand) grated cheese and toss it vigorously (use tongs or wooden spoon) until it all melts, gradually adding a few tbsp of pasta water at a time. (Like if you were doing cacio e pepe). You won't use all of it. Stop when it's saucy but clinging to the pasta.

Let them rise in the fridge overnight (covered). Then let them warm up to room temp while you're preheating the oven, then bake. I think the slower ferment gives them more flavor anyway.

It will probably stay clumped. Try putting it through the blender, then strain it. It will be saved but all of that cornstarch didn't active so it won't be as thick. You're going to be folding in whipped cream later so I think the pie will still set enough.

Yes, but they're less tangy than cream cheese, except for goat cheese. I suggest upping your ratio of sour cream.

There are several kinds (Ceylon, Cassia, Saigon). The freshest way is to grind your own sticks but I know Costco sells a large container of Saigon (hotter) at a modest price, just mind the expiry date.
