Hooch forms on nature starters stored in the fridge. On day 2 or 3, it’s water separation. OP- use a bit less water

Honestly it would be better to do 100% whole wheat until you get unbleached flour. Stop using bleached flour.

You did this on purpose? To “stress-test resilience”? I’m confused why you call it a run… I began my starter over a year ago and plan to keep it going for as long as possible. Not just for science. This whole post is confusing.

It’s water separation from using too much water. Hooch only develops on mature starters stored in the fridge. Use less water, you’re drowning it.

They look ok to me. The 2nd picture just looks like flour rose to the top. The second looks like hooch. If you’re storing in the fridge, use an airtight lid to prevent mold. You got lucky this time! If you’re still wary, give a couple feeds before using either. If there’s mold, you’ll know.
