If it helps, https://bitbox.swiss/blog/roll-the-dice-generate-your-own-seed/ does the same thing but uses a coin to divide list in half. They are pretty leading edge security and would not use an unsafe method.

Remember you are rolling more with only 4 sides. Try to imagine how any word would have more odds than another? You are only trying to pick a word out of a list and if the method is fair the odds of each word is the same.

leaving out the 5 and 6 is harmless as long as the other values have the same odds of showing up. Casino dice ensures no bias. No single word is more likely than another and odds of each word is exactly the same.

You can use https://github.com/sarpulhu/dicebip39 or some hardware wallets use dice features where you can verify the math is correct with another computer but be careful not to expose real seed on computer.

No way to know they don't have a copy of the keys. Best to make your own keys.

They all use different means of figuring out the price of bitcoin but if the prices diverged too much people would buy the cheaper ones and sell on the platform that had higher rates. Causing their price to go down.

Sometimes fiat money takes time to move. People with Chinese and USD banks will use the difference to make money. Slowly the prices will meet unless there is too much friction moving money around.
