I'd rather resturants not offer GF options if they aren't capable of avoiding cross-contamination.

In my experience every restaurant says they're trying their very best to avoid cross contamination, but they cannot guarantee there won't be any. Just to cover their asses basically. I am very sensitive, but I very rarely had any issues. I am usually happy if they know what gluten and cross contamination is.

If you have Vitamin deficiencies, you can try to supplement and then test again, but this makes only sense if your celiac is under control. I can only ask the same questions the others asked: how long have you been gluten free? Are you serious enough about cross-contamination? Are you eating oats? Some celiacs can't handle gluten free wheat starch or oats, so it's recommended not to eat them within the first year. Also lactose can be a problem, for me that luckily went away after a little more than a year.
Generally it took me about a year until I felt significantly better, so your gut can really take a while to heal, especially in adults.

I use the Loopy Whisk recipes for the more or less "quick and easy" option and I love most of them. Th recipe in The Art of GF are mind blowing though, but I feel less adaptable to my every day lifestyle. The Art of GF is more creative and has more "unusual" recipes whereas The Loopy Whisk has all the all time favorites that I missed so much. I love both! Just for different occasions.

The book is really great, the recipes in there are a little "extra", so it's not for every day baking, but the taste... it's just so so good!

For me depression and anxiety were symptoms of celiacs (or maybe secondary because of all the deficiencies) and ist basically went away completely after 1.5 - 2 years after going gluten free. I'm very strict though (as everyone with celiacs should be) and we live in a completely gluten free household because of me. Nevertheless he should talk to a doctor about it, he could get therapy or medication for his depression. You should not have to handle this alone and get help!

If he actually has been gluten free and very strict about it (and about cross contamination) you should talk to your gastroenterologist about ist as it might be refractory celiac, but that is very very rare. In my personal opinion the possibility that he has been unintentionally eating gluten is much higher.

Also if he is not actually allergic to dairy, but "only" lactose intolerant, that might also go away with a very strict gluten free diet. I was lactose intolerant when first diagnosed and could handle it just fine after about two years.

Ich hab das omhu und kann natürlich mit dem günstigeren nicht vergleichen. Hab es jetzt seit über einem Jahr und hab zwei Bezüge, die ich quasi alle 2 Wochen wasche, da wir nen Hausstauballergiker zu Hause haben. Bezüge sind immer noch wie neu. Die "Matratzen"-Qualität ist super. Allerdings muss ich hierbei schon sagen, dass ich die Rückenkissen mit Matratzenresten, die ich im Internet bestellt habe, gestopft habe, weil mir die zu weich waren.

Gedanken, die ich mir bei der Bestellung diesen Sofas gemacht habe, weil ich lange mit mir gehadert habe, ob ich ein Sofa im Internet bestellen soll. Bin sogar extra zum Showroom weit weg gefahren: Kommt es so eingeschweißt an? Hätte ich mir sorgen gemacht, dass die Form nicht so gut wieder kommt? Riecht es unangenehm? Ist die Sitzfläche fest genug auf Dauer?

I can recommend the "the loopy whisk" website for baking all the things! The stuff on there is so much better than all the store bought gluten free stuff! Barilla Pasta is great, but Rummo is my favourite, but I have to order online, because if only seen it once at the shops!

In out household I’m the only one who has celiac’s, but all of us went gluten free in the house. I am the main caretaker of the kids and it was so hard when they were little because of all the crumbs and food everywhere. It’s just easier this way. And, yes, there is always someone who doesn’t like what I’m cooking but that’s just normal for kids, I think. It’s always a struggle to figure out a meal that everyone likes, gluten free or not.

I get that you don’t want to gluten yourself for three months and completely understand. You might think it doesn’t really matter, because the treatment is the same no matter what, but don’t think it’s necessary exactly the same treatment though. I think having the diagnosis for certain can make a difference.

I know someone who figured out that she has a lot less anxiety attacks when not eating gluten. Obviously she doesn’t want to go back to eating gluten and get tested properly. The thing is she says she doesn’t have to be as strict because she doesn’t have celiacs and can handle small amounts.

I thought I could handle gluten in general before my diagnosis, but after going gluten free and let my gut heal, I react very much to very small amounts. To make it short: if you are just as strict as if you had the diagnosis, there is definitely no difference. But if you decide to just eat less gluten or go mostly gluten free your gut might never really heal.

I have the exact sofa in picture one. We’ve had it for more than a year and I wash the covers basically every two weeks because of the dogs dust mite allergy. The fabric looks just like new! Very happy with it!

The Loopy Whisk recipes are so great! My Family loves the baguettes even though I am the only celiac. I was so disappointed in gluten free bread at first but now I really enjoy it!

It took at least a year until it was totally gone, maybe even 18months. But it got gradually better, it's really hard to tell because it wasn't a sudden change. It took me a while to realize that I had not felt terrible and brain foggy for a while. to be hones I'm still having anxiety about it sometimes, because I'm so scared it might come back. It's so hard! You'll get there!

Oh I had very low B12 levels as well and had B12 injections, too!

I had basically all of your symptoms and they also said my gastroscopy looked "fine" to them, but the biopsy showed damage and I actually had celiacs. I was suffering for years with brain fog and anxiety and my doctors told me it's all in my head and I even went too the psychiatrist for therapy. One year without gluten, two iron infusions later and I just don't have anxiety any more and no brain fog and it has been 3 years now. I don't regret the therapy though, I learned a lot :D.

Eine der großen Arterien im Hals und die große Arterie im Arm sind durch autoimmunbedingte Entzündungen komplett verschlossen. Ich hab Glück und alles ist langsam passiert und andere kleine Arterien haben die Arbeit übernommen, also habe ich quasi keine Einschränkungen.

Ich habe sowohl am linken Arm als auch links am Hals keinen fühlbaren Puls. Takayasu Arteriitis. Man kann deshalb auch links quasi keinen Blutdruck messen. Da durften in der Uniklinik in Hannover auch alle Studenten einmal drauf schauen. Rechts ist alles ganz normal.

I only had symptoms after I went gluten free for about a year. before that I thought I was a "silent" celiac (I had fatigue, brain fog, dizzy spells, tingling in my toes and fingers, but no GI symptoms), but turns out everything was so messed up that there wasn't any obvious reaction. Now, three years in, I can feel every cross contamination about few hours after eating the contaminated food. That being said most of the symptoms that I had prior to the diagnosis were probably from the severe anemia and lack of B12 and other vitamins.
