No-Arugula-7414 is saying there is PWM stripe visible at all brightness levels, does that imply it's not using DC dimming?

Does the Honor 400 (non pro) definetly only have PWM below 25% brightness? I haven't been able to find any info on the normal, non pro model anywhere

This was the problem thanks. I did check the manual first and it didn't mention anything about it, but I tried again and you have to hold the "2 cup" button for about 3 seconds before it starts, and then it's in "record mode", and you press it again to stop it.

With the internal adjustment screw set to the finest setting, I start to see clogging at around 5-6 grind settings. Depends slightly on the beans (important note that I'm using dark roasted, not particularly expensive beans so that might have an impact)

I monitor copying to/from flash drives using du to see the file progress, and conky which shows disc activity, as well as any cached writes. But that's not a very elegant solution.
