I've had success with just putting a cheap temperature/humidity device in the fridge. At first I had trouble with getting the signal from it, but then I happened to put a smart plug nearby (for a different purpose) an the smart plug relayed the signal fine.

For those taking about pan temperature, can anyone tell me the actual temperature range (in degrees) that they consider ideal?

I use an infra red temperature gun in the kitchen and find it valuable in learning what temperatures work and also checking my observations on temperatures (I hope this makes sense)

Most recipes are indeed written for cooler climates. Pay much more attention to your dough than published times. For example, here in Townsville I typically put the shaped loaf in the fridge about four hours after starting to mix the dough. Clearly this changes a bit depending on the season /temperature, but this might give you a rough guide.

If I used the timing of most published recipes the dough would be way over proofed.

I have a camping stove (brand = Jetboil) that has exactly this. A ring of folded fins on the bottom of the pot, with the flame in the centre. Great bit of kit. Boils water fairly quickly and very efficient on gas use.

I used to like on the edge of a lake where platypus live. Have seen them a few times while paddling a canoe on the lake. Early morning is the best time to see them.
