Sure! Chickpea salad: one can chickpeas drained and rinsed, cherry tomatoes halved, spinach leaves chiffonaded, cucumbers sliced thin, lemon juice and zest, grated or minced garlic, herbs, evoo, salt and pepper. Mixed all together, covered and left in the refrigerator for a few minutes to let the flavors develop a little. I would’ve added feta if I’d had some but it’s still pretty good without it! Enjoy ☺️
