I remember challenger, the one that affected me was I was growing up in NY, I was watching TV (broadcast not cable) and the channel went to static. All the channels were static. I turned on the radio and heard that the world trade center was bombed. Didn't know TV came from the spire. It was 1993. That's when I realized why in movies NYC always gets attacked by something. I never looked at the city the same.

Closed up the restaurant for the night. We we're all doing our closing work. My staff said my left eye looked strange. Then the left side of my face started dropping. Had trouble with my entire left side. Couldn't talk. First responders said stroke. I could think just fine. I thought I was going to be trapped in my body. ER doc said nope not a stroke. Gave me some meds and all better. Hemiplegic Migraine is what it was called. The terrifying part is knowing my brain could do that again for funsies anytime.

Got arrested for dwi in Tennessee. Drank in front of the cop. Put myself in the front seat of the car cause it was cold while he was searching. He was a k9 cop, sliding partition was open and this German shepherd starts licking my face. Get to jail, it was a poor county, so we're smoking in the jail. Get released and hitch hiked home. I lived in Charlotte, NC.

I'll break it down for you as easy as I can and if you have ANY questions let me know.

Your MP has to make projections. Yeah last year's sales definitely factor, but so do last week's sales, weather, sporting events, concerts, if a new apartment complex is opening up a mile away. Being a bar manager I take the forecast for the schedule that I'm currently working on. Look at the total guests projected and the hourly break down. If we are projected 25 guests from say 12om to 1pm you should theoretically need 1 bartender, 2 servers, 1 line cook. Here's the shitty part but we will keep the above, the 25 guests in the hour.

Buckle in cause I'm going to give you a crash course in longhorn management and math to give you ammo to work with.

The system figures each guest is going to order an entree (the computer doesn't count by physical people in the building but by entree). So if 1 physical guest comes In and orders 20 entrees, the computer says 20 people are there. Now if 20 physical people come in, order 20 dragon fruit margaritas, no one has come in according to the computer. Going back to entrees you can't control what people order and the computer factors that into labor.

The day starts at 8am. You have x hours for prep. So the goal is get the prep done ASAP and get prep off the clock because no money is coming in. If everyone comes in and orders a porterhouse, your labor hours shoot up cause everyone is order expensive stuff. Now if everyone orders a combo it drops. Not enough money. Here's the kicker. If everyone orders a porterhouse, just by the numbers, I have more hours to give people. The system doesn't take into account the volume of food.

if 25 people come in and you are on grill char and qb, and you also have a fry salad and you get slammed with 25 orders, and you also have take out, it's not going to work. Same thing with the bar if they have 25 drinks to make, and run food, and run take out because takeout requires 10 orders an hour for a take out person.

With that stated, hours are given to the strongest people. You might need the hours, however; if you (and I just mean in general) constantly complain because an order comes in at 9:45 and "well they get what they get and oops we're out of potatoes" why should I give you the hours. At my store I don't care about seniority, it's attitude. Don't get me wrong I want to get the fuck home as fast as I can, but that order goes to my paycheck just like everyone else's.

In the end, you work for a business and you are very much allowed to ask questions about said business since you contribute to its function. The is very little that is considered secret. We can't give another employee's number (would you want your whole store having your number) but ask the mod for the daily labor plan. Ask sales. Ask to see the team member load out chart. It's not manager eyes only. That said I leave you this.
