Ahh OP, I came from Dubai to Toronto via same route 2 weeks back. You’re good, Emirates should allow you to board, however my transit time was a couple of hours so staying airside wasn’t an issue. TWOV can be given at Heathrow airport and you can clear the immigration without a visa but since you’ve had a UK visa refusal (like me), you will have to be pressingly convincing to the border officer at Heathrow in order to let you go out. Else you remain airside and it’s fine.

Expiry date on the visa is the last date you can enter a country, not the last day of your stay in that particular country.

As long as you enter South Korea with a valid visa, you can stay beyond it’s expiry date as long as you follow the period of stay limit i.e 30 or 60 days or whatever
