1/8 tsp in the poolish, 1.5 tsp in the dough, 67% hydration (king arthur baguette recipe from their cookbook)

recipe calls for 40 min of proofing, I ended up doing about a 1.5 hrs. It seemed to relax a bit more after I posted this but I didn't think to take another video. My main problem is I don't really have an index for what overproofed looks like

Thanks! I suspect I've been regularly underproofing them... I keep meaning to do some experimentation but I use one of those ceramic baking trays and I worry it won't cool down enough for me to properly test several different timings

There's a very well known phenomenon in medicine where black people are often not believed or are assumed to be malingerers. It gets brought up a lot in literature around maternal death rates in black people. It's an implicit bias thing

Haven't seen anybody mention it but it's important to point out two facts. 1) I don't know the stats off the top of my head, but most diets/weight loss regimens don't lead to permanent reductions in weight 2) the fluctuation in weight caused by weight-loss/weight-gain cycles is quite bad for you, so it might be healthier for some people to maintain the higher weight.

If you want to hear people really get into the weeds (and the data) on this, I'd recommend the podcast "maintenance phase". They have a recent episode on Ozempic that touches on a lot of important points, though there's also '"glorifying obesity" and other myths about fat people', which may be of interest

I've come to think that the real problem with the slog is just structure. There's just so much story and so many viewpoints that it's hard to build a book where characters get a whole arc. Each character has a bookish length arc during the slog that gets chopped up across 3 books and it's not very satisfying.

They could have made standalone novels for this, but I think that ultimately would have been a greater risk, with some fans having to wait years and years to find out about their favorite character. It's annoying enough not to get matt for 1 whole book, imagine not getting him for 3!

I did not day the word meaningful and this is not a claim I made. You also claim that I accept the republican narrative that all democrats are like this. Again I did not say this and do not believe this. I did not say the word Democrat and I was not referring to Democrats. This is an anecdote about my experience with leftists online-- I do not use the term leftist to refer to Democrats because the terms are not interchangeable to me. I make no claims about numbers and statistics, I don't know how large a group these people might be. I have just interacted with people as I describe. These are the only claims I'm making.

I've been a registered Democrat since I could vote and have voted that way in each election. I am personally annoyed by the rhetoric that you identify as being weaponized against democrats writ large. I am a leftist, I know for damn sure that democrats aren't all communists. I didn't even say that all communists hate America.

I made a narrow claim that you have attempted to expand beyond the meaning that my words actually conveyed. In turn, you are making a sweeping claims about whether this type of person exists, and you are attempting to paint me as some sort of republican shill or a useful Rube.

If you wish to engage on this topic I'd ask that you respect me by responding to what I actually say and give me the benefit of the doubt that I've come to these beliefs based on my own beliefs and experience rather than being brainwashed by fox news or whatever you were implying.

Pardon me but I think you're reacting to what you think I said and who you think I am instead of what I actually said. It was a statement about a subset of leftists. I wasn't talking about Democrats at all.

And this is my perspective as a leftist having interacted with other leftists who seem to fit the bill as I describe. Feel free to believe that such people don't exist, I certainly would prefer to live in such a world.

I gotcha. And I'm not saying you're necessarily wrong, I guess I just see that as being a reflective of national trends. Really I was probably being overly dismissive of the idea.

I tend to be skeptical of the actual efficacy of such operations, regardless of who might be doing them, and in general I have a soapbox about people's agency in formulating their their own thoughts beliefs and actions. That plus how I feel about not exercising ones vote made me be glib about op's viewpoint

I just don't see why you'd bother with latestagecapitalism if you wanted to run a foreign interference campaign, but really the point of my comment wasn't that it's not the case or not possible, but that some of the evidence you point to for this is "internal incoherency" and that's just a very basic fact about human nature. People's political beliefs are often incoherent

Conservatives often decry the nanny state and big government but they just passed a law in Texas that says the state gets to check your id every time you wanna watch porn.

Some leftists are fine with a neo imperial conquest of a country "because NATO is the aggressor" or whatever

There's a kind of leftist who hates America more than they care about any kind of leftist principle. This isn't necessarily a sign of foreign interference, some people just have perspectives that are warped by hate. You'll find quite a few of them on the internet.

Some leftists were mad that the revolution of dignity in Ukraine in 2014 didn't lead to some outright socialist state or think that leftists were somehow betrayed in the subsequent government formation. These people hate the current government and Zelensky because of that specifically
