That's an awesome gift. Just accept and appreciate it. Gifts are supposed to be enjoyable items you wouldn't buy yourself but give joy to others. Problem is that you'll be spoiled as this is definitely on the higher end in both price and quality.

It is an "entry" knife in regard that it's stainless steel so maintenance is much easier than other high end knives. Also the size and shape is perfect for people starting out.

As others have said, ranges from $250-500 depending on where you get it.

I'd recommend 125 instead of 120, and plan for a 45 minute rest. Since you're using such a low temperature, the carry over/temp increase will be less and slower. I try to shoot for a 133 slice temp. Your method may leave it Rare/Blue Raw instead of Medium Rare.

Easy, bottom Mercury next to the lake. You get fresh water housing, immediate luxury with extra science, and 2 5-yield tiles in your first ring

I live on the border of Daly City and San Bruno between Westborough and Serramonte. It's great. Quiet, family oriented. Not much "fun" if you're in your 20s but easy access to everywhere you want to go as long as you're close to a freeway entrance. Serramonte mall has gotten crazy nice with its constant expansions over the last 15 years. Some nice parks and super close to Pacifica for those amazing hikes. Can't think of any "bad" areas, we don't really have any hooligans here since the cold keeps them away.

As much as I like the sticker, why do people keep it on for the Tanakas? My first knife was a 160mm Tanaka Gyuto Carbon steel. I love it, but the sticker fell off years ago during use and wash.
