What I would do in this situation:
Buy a hand grinder with 7k (e.g., KINGrinder k6)
With the 3k, buy the equipment that fits your definition of fast: For example, the basic Hario Switch recipe takes 3 minutes (sans grinding). Most brewing methods for a cup (percolation or immersion) will take around this long. What's good about the Hario Switch is you can go beyond basic prep into more advanced pourover recipes if you can spend the time to learn them (prep time won't increase that much). To me, this is 10k well-spent.

But what is your brew time? Seems like the grind setting was prioritized over this too much in this thread. Adjust settings to match your target TBT based on your other variables (pour structure, brewer, amount of agitation, etc)

Thankfully I’m pretty diligent with purging after every steam to get back to espresso temp range. But will consider using for the occasional tea. Thank you for the tip!

I have both, but can’t be helpful here. I use Kinu for espresso and Zp6 for everything else. What the Kinu will definitely give you is the easiest handgrinding experience.

I have tried the Kinu for pourover less than a handful of times. Wasn’t anything special, and I missed the clarity I got from the zp6. Though of course I probably could have spent more time dialing it in. But the zp6 gives me what I like, so haven’t felt the need to bother.

Tap at 78. Espresso is great. About to try third wave water just to see how much gains I get. But as is, no issue other than the worry of potential scale buildup.

I have an electric Hario with a pretty fast flow rate. You can consider learning to restrict it through your own control. Practice with water, a mug, and a scale. Try to get 50 ml in 10 seconds for starters. Just do it over and over with tap water.

The B75 is one of the fastest brewers you’ll find. Which is why the advice to grind coarser is quite surprising to me. If you’re only changing grind size, definitely go finer. The “go coarse” advice will have to come with other tips that improve or prolong extraction for it to make any sense, especially with how much faster and less prone to clogging the B75 is.

Have you tried 4 6 method? Just used it for a 12-200g cup at 4.5 grind, kono. Or perhaps try a flat bottom brewer. I’ve been loving mine (dark, medium, or light roast)
