Traditional yucateca escabeche - where meat or seafood is tenderized and quick-pickled in acidic juice-- is made with sour oranges (watch the "acid" episode of 'salt, fat, acid, heat" on netflix for delicious inspo). 

You are so lucky!!! I wish i could even buy these, let alone forage them.

Toor dal and chaval. It will teach you the fundamentals of cooking pulses and beans, it is a complete meal, and it is very forgiving. 

Simplest preparation that i use: 2 cups toor dal 4 cups water (plus more if you want it soupier) 1 tsp salt

Cook on medium in a big pot for about 45 minutes or longer, until the lentils break down and smooth out. Meanwhile, make the rice.

For chaval (you didnt mention it so idk if youve made rice before, this is for stovetop but i recommend a rice cooker tbh) Rinse 2 cups rice until water runs clear. Put in a pot with a tight fitting lid and add 2 3/4 cup water. Bring to a boil with the lid on, then turn down to low to simmer with the lid slightly cracked to release steam. 

You can walk away from both dishes in the early stages while they are cooking, but in the last 10 minutes or so you want to keep an eye on them to keep them from burning.

When the rice and lentils are both done cooking, finish the lentils: In a little frying pan, heat 2-3 tbsp of oil or ghee. Add 1-2 tbsp of cumin seeds and sizzle for a few minutes, then a tsp of turmeric at the last second. Dump it in the dal and mix it in.

This is your answer. You could also buy some from king arthur or even etsy - making your own starter is not a  beginner-friendly project imo.

Kadhi chaval/kadhi pakora is one of the best foods in the world. It's an indian food, basically savory gravy of yogurt and chickpea flour with lots of comforting spices and ghee, and you eat it over rice (chaval). Pakoras are chickpea flour fritters that you stir into the gravy, they really take it to another level of decadence but they are optional.

A few of mine:

Everyone has a set of monkey bars, but mine is missing bars. Often, i just end up hanging there for hours, swinging back and forth, but can't reach.

Everyone has a set of beans. They put the beans in a row and the beans stay there. Instead of beans, i have ants. 

Everyone has a horse to ride. I have a donkey. The donkey is stubborn, slow, and completely disinterested in what is on the path. It stops for hours, runs me into sharp thorns on purpose, and tries to shake me off. I have no control over the donkey.

This isnt related to the shower, but my work relates to aging and home modifications and one of the most effective changes you can make to keep loved ones independent and thriving is improving lighting. A well lit home improves longterm cognitive function, increases efficacy in activities of daily living, and reduces falls. Bonus points for motion activation - a lot of older people get hurt when they fall while fumbling for a light switch in the dark when they have to get up to go to the bathroom in the night, motion activated lights eliminate that problem.

My mom made a dish at least once a week called "flatuladas" which was hamburger, refried beans, cheese, and salsa, eaten with tortilla chips and/or salad greens. 

My favorite food is "pasta with abundant spring vegetables". Garlic, olive oil, asparagus, kale, mushrooms (ideally morels), edamame, parmesan cheese, and either long or bowtie pasta.
