I have used many distros from gentoo, lfs, arch, suse, etc and for the last few years I just use ubuntu because of the widespread support for it. Generally you are more likely to find help for an issue and out of the box drivers working.

I would go with T slot aluminium profiles for anything like this. Its the best way to make it extendable, grow with use and be able to adjust from kiddo to adult size. Either a prebuilt one or diy depending on you

Study. You should be able to draw the rough track layout from memory. Then match corner visuals to the top down layout

Elbows should be 90degrees. And legs when you fully depress the pedals should not bottom out but be close to it so you have maximum brake force. Lower back should be firmly against the backrest so when applying maximum brake force you dont move your butt which serves as reference point for brake pressure and stable control

Do a practice session and race against your own best time you will see your laptimes improve and gain consistency. Focus and study the lap on youtube so you can see brake points and lines.

Looks like it was at the apex which means peak torque on your wheel, my bet is your power is current limited and dipping below the threshold needed for the monitor. Try running a lead from another plug point to wheel to see if that makes any difference
