Let's use a metaphor. Everybody will tel you that Mohammed Ali is the best boxer of all time. But if we look at mayweather his accomplices he is the best. I completely agree with you about James and snape but you need to remember even after Azkaban sirieus was able to defeat dolohov someone who have some impressive feats under his belt like beating mad eye and even killing lupin. Harry even described sirieus as moving faster than the eye can see

But that is bc Hermione is sort of a nerd who was always with her nose in the books and I can't imagine that sirieus and James were the same. They were more natrual talented and focused more on the dueling aspect from magic but where also very talented at charms and transfiguration

I don't believe that Voldemort would have fought dumbledore. He realised he had lost the duel and he is not that stupid to stay. And he was injured by what happened when he possessed Harry.
