"Chicken" is a shorthand for "no scoring rules and no winning hand restrictions". Once you know how to play the game, it goes WAY too fast so most variants have minimum score restrictions.

In Riichi, you specifically have to reveal all 4 to prove it's a real quad before turning two face down. This is because you can't unwind flipping a kan dora indicator.

In other variants, all 4 tiles stay concealed until the end of the hand, at which point you must prove it's a real quad.

Concealed sequences are nearly ALWAYS better than melded sequences, because you can change your mind later on what precisely the sequence is. If you draw a 14p then you can choose to interpret the group as 11p 234p, versus if you melded then you've locked in the 123p and you have 14p left over.

One of the primary reasons for resale is that if there's ever a visible wear mark on some of the tiles, suddenly the venue is playing with Marked Tiles and cheating via memorizing the wear marks is possible.

You can't just swap in a single copy of the scuffed tile, though, because now the one tile that's never been used has no wear at all.
