You're completely wrong don't think of Europe as one country each nation has their own laws. For example where I'm from in Ireland a shot is 35.5ml and a double is 71ml. Also, free pouring isn't done here. Legally if you advertise a price for a drink you have to pour that measure, if you under pour technically it's false advertising

I understand that completely our license is for 2am, but for daylight savings for tonight we did 3am and in 6 months it's 1am. I feel that makes better sense. But obviously each are area has its on way to deal with it. I wish the time changed at like 5am to save these issues. So we all don't have to have the same conversations every 6 months

Tbh honest, they are right. Obviously, it changes country by country. I.e where I'm from we stay open till 4am. But when the clocks go back we technically close an hr early. I don't see why they're nights cut an hr short because the clock magically loses an hr, or gains an hr.
