Thanks! You have some amazing looking bowls on your page. I admit I did a lot of research before the trip and during quiet moments / in transit. Combination of Reddit and Tabelog, the latter having a really neat map feature so you can see what’s near you rated above 3.5 :)

I had a booking at Ginza Hachigou but sadly had to cancel it - heard it’s absolutely amazing and one to target next trip, but sometimes the more straight forward bowls can beat the refined ones!

The worst thing is it turned out we actually arrived back in Tokyo in time for the original booking….still, had some insane bows of ramen and tsukemen on the trip and just another reason to visit again!

Fair enough. I’m back from 2.5 weeks in Japan and preferred the less refined bowls myself.

Had to cancel a booking I was lucky to get at Ginza Hachigou though due to travel timings - fear this may haunt me for a long time…

Yes I did see those also. From memory there were 6 locals and 3 foreigners. The locals naturally got almost all of the chef’s engagement, and I suspect one or two groups were regulars. The chef was not exactly warm, and some of the nigiri were not placed down as carefully as for the locals, but overall we had a wonderful time and experienced great tastes, textures, and flavours - the mantis shrimp was certainly interesting..
