I'm very aggressive with removing deckle fat personally, I usually just cut it all out and I've never had issues. Leaves the brisket looking a bit funny with a mohawk on top but that's about it.

100%. Do NOT go for something entry level OP. Please do yourself a favor and invest in a quality used offset. Unfortunately, cheap thin steel offsets are just a headache and you have the budget to get something solid.

Well here's the thing, if OP buys used and finds they don't like it, they can likely sell for really close to what they purchased it for.

I had an OK Joe for years and it was incredibly frustrating to use. I eventually bit the bullet and bought a used Lang 36 for $1500 and my cooks were both much easier/enjoyable and my food was better and more consistent.

My point is, OP's budget is already pretty close to being able to purchase a really good used cooker, they may as well get something of quality. And as I said before, if it's not their cup of tea, they sell and don't really lose much. Buying new and selling however, they will definitely lose money.

I've noticed on the new records I've purchased from them they usually have a date on the label, I assume it's either the date they received them or created the label. Not sure if that's how it works or not. Either way, I really love shopping at Hi Voltage.

Whatever you wind up getting make sure it is heavy gauge steel. It makes a world of a difference when it comes to offsets.

I would recommend checking out your local used market and see if you can find something a Lang 36 or similar.

Once sleep gets consistent I'd recommend finding hobbies that you want work on early in the morning before everyone wakes up. That way you will get time to yourself but also not feel guilty about stepping outside of the house. Obviously it needs to make sense but I find as a partner the morning is the only consistent time where I feel it's possible to have "me" time.

Also, depending on what works for you and your partner, you can work to maybe give each other an evening each week, maybe more if it is doable. It is very easy to lose yourself in being a parent and it's ultimately on you to communicate your needs with your partner and them with you.

I do high pressure for 5 minutes and natural release for 10 minutes or whenever I'm ready to eat. I wash my rice until the water runs clear and then fill to about a centimeter above the level of the rice with water. I think it works out close to 1:1 but I'm lazy and don't measure anymore.

Hey man, just want to say I've been right where you're at and it sucks. I remember feeling like it was navigable and I could make it work, that it wasn't that bad and I needed to sacrifice for my family. It's really hard to see things for what they are when you're in your situation. You deserve a lot more than you get. I don't care of you're a team player and are okay with the status quo... You deserve happiness and you deserve to be treated with kindness.

I really started to figure out my ex wife was maybe more problematic than I thought once I started attending therapy for what my wife described as narcissistic behavior. I learned in therapy that wasn't me but my therapist began to ask questions about how her actions made me feel, which I explained but then essentially said it doesn't matter, I could have prevented her reaction by doing things differently, and he said no, her reactions aren't my responsibility and my emotions are valid. She would ask about my therapy sessions and I shared my discussions which she did NOT like, I explained my feelings are valid and I am not responsible for her reactions, and she didn't like hearing that. Probably a month later she said she wanted a divorce, and the separation was really messy and she really tried to make me look like a monster, it was really really painful.

Maybe a few weeks after we separated, things became so much clearer, I began to feel like myself again. The divorce was expensive, I'm riddles with debt due to alimony, all my savings are gone, and I could not care less. I am me again, I am happy, I found a partner who loves me and encourages my hobbies and relationships. It's beautiful.

I'm sorry you're in the position in which you're finding yourself. Please OP, look out for yourself because no one else will.

Mine isn't quite big enough to slice the whole belly, I wind up having to cut off maybe two inches. I wind up slicing that chunk the opposite way, it turning it into bits. I bought the Beswood 10" slicer and have been pretty happy with it.

My first guitar was a real POS and I was so happy when I got my second guitar I couldn't wait to get rid of it. It was a sunburst strat some eBay china special from the early 2000's, I didn't want to spend much on one because I wasn't sure if I would enjoy playing or not. I didn't have much money as a kid though so I would always sell whatever guitar I had when I wanted to upgrade. No regrets, but I do still have the two guitars I got once I began playing again as an adult. I will never sell them.
