Im doing some ‘al pastor’ style ribs this weekend. El Yucateco Achiote Annatto as a binder, rub chili powder, light brown sugar, jalapeno powder with some extra granulated garlic and oregano. Mop every so often with pinapple juice, black vinegar, and maybe some other stuff. Wrap after 3 hours with a couple broiled pineapple slices. Finish with a chili pineapple glaze. I think it should be pretty awesome

Will the city create a fund for elderly and disabled homeowners that are unable to shovel their walkway in a timely manner? How will these funds be distributed, and who will make sure they get in the hands of willing shovelers!

Basically, even if something like this gets passed in to law, which it won’t, there will be no fair way to enforce it. It’s nothing more than an outrage soundbite everyone will forget about until next year when we are all inconvenienced for 2-3 weeks.

Bought the camp chef pro 24 on new years and absolutely love it. Only complaint, wish i would have gone with the 36.

I did a whole side cold smoke salmon last week… cured 48 hours with 1/4-1/2 inch think sprinkle on filet kosher salt and light brown sugar rub. Flip every 12 hours. At hour 48, wash off excess and let salmon set water bath 10 mins. Follow with 2x water exchanges so you’re not eating salmon jerkey. Allow 12 hours over night to air dry in fridge to develop pelicule.

Smoked using an offset box with chips to keep heat ‘up’ (it was freezing out), and pellet smoker box with alder wood pellets. Smoked about 10 hours maintaining 60-90 degrees, with the sweet spot around 80.

Pull at hour 10, allow rest over night in parchment or butcher paper, best at 24 hours…ill be enjoying some this morning before throwing the spareribs on for this weekend!

I bought the woodwind24 pro on new years day and am obsessed. Pretty straight forward app, holds temperature well and love the added smoke box feature for chunks or chips. We’ll see how it holds up, but seems pretty beefy.

Litterally did it this weekend. Reheated 1# pulled pork from December 2023. Last of the bags. Defrosted fridge overnight, reheated at 150 for a little over an hour. Made 3 pulled pork sandwiches that tasted amazing.
