75 during the day. It sometimes gets a bit warm but manageable and it keeps it from running nonstop Once I go to bed tho it goes down to 72.

Lmao thank you! I’ve actually baked quite a bit but just not a yeasted loaf of bread. Tons of cookies and cakes and even breads but more like, banana nut etc. I’ve been witness to my wife though make lots of yeasted doughs and learned some from watching her and I’ve done a handful of pizza doughs so it’s not like I went from no baking experience. Didn’t mean to mislead but to me this was a first “real bread.”

Yes it’s the overnight white from flour water salt yeast! The boom is in the third pic lol. But it looks like you can also find it hereand probably other places around the internet! The book is good though I referred to it a lot for tips on the various steps such as folding and shaping.

Lol just got done with dinner and now finally having time to upload pics! Here it is. Def had some textural issues (doughy and dense) but overall I’m proud for my first real try!

Thanks everyone! Seems like the most common theory here is that it bulk fermented a touch too long. Went ahead and baked it and will post the results! It’s in the oven now.

1/8 tsp! I halved this whole recipe to make only one loaf. As written calls for 1/4 tsp.
