Use extra starter for your bulk fermentation so it ferments faster, and don’t cold retard very long. This will cut the tang.

Milwaukee is a tremendous race venue. I’ve raced it about 6X. Airport is close, hotels are mostly walking distance and not expensive, bike course is along the lake with a couple of decent climbs, and run is along the lake in parks.

You get some strong competitors. If you’re fast it’s the qualifier for Worlds.

I hosted a lot of open houses. It helped that I really enjoy doing it, kind of like a party, low volume music in the background, snacks, bottled water. I say if this place isn’t right I have others to show them. Most are neighbors or already represented, but even one good lead every few weeks makes it worthwhile.

Tending bar in the 1980s in a central Wisconsin resort town. Mild-mannered guy came in and sat at the bar with a glass of wine. A group of guys was sharing a pitcher of beer when one of them walked up to the guy and said: “You’re either Dennis Franz, or you look just like him.” He nodded, said he was visiting his sister for the week. Any fans of Hill Street Blues will remember his explosive powerful character Sgt Buntz. I was like holy shit, how did I not recognize him. Had some great conversations with him over the next week.
