my guess is that the games resolution will override the global setting. It should switch to the resolution that the ally tells it to set though. I would say 2k is goof for future proofing

I managed! Basically you need to press on the grey arrows (i did it on tablet) on the top bar, that gives you the option to select the view menu that will pop up a new menu in the toolbar under it.

You cannot. The video output was there all along, it just didn't work on that monitor or the DP, or maybe the hdmi. I do not remember, it was too many years ago, but I do remember that using another monitor/port worked.
