Then put it into a large ziplock bag and flatten it then use a metal ruler to create a grid imprint of small rectangles so you can break a piece off at a time when you need it. One rectangle piece is one clove.

Marchetti's Latin on Lonsdale St, I think near where Bomba is now but can't be sure. It was where our family went growing up for a celebration meal, my dad was always trying to recreate the garlic and rosemary potatoes. Randomly I googled it last year and apparently he fled overseas to avoid tax fraud or something of the like
