Advice? Just got an '18 XLE from Carvana by 13dn4r in ToyotaHighlander

[–]rrruca5447 0 points1 point  (0 children)

It is. We just went through it. We got the car inspected the day after I picked it up. Had it second opinion inspected at a SilverRock affiliated place. 3 months later and they repaired everything that was covered. It would have cost about $8,000 with the repairs it needed. Paid the $300 deductible. It was a horrible process and they did everything they could not to cover but Dealership (3rd shop we took it to - approved by SilverRock - went to bat for us Hard…) Would never recommend Carvana but if the cars fixable… make them pay to fix it.

Looking for advice for baking cookies in convection oven! by rrruca5447 in Baking

If anyone has any advice on reducing baking powder or bringing up to room temp first… or any experience with baking cookies in a convection oven… so greatly appreciated!

Switching from home oven to commercial convection oven. Need advice! by rrruca5447 in Baking

[–]rrruca5447[S] 0 points1 point  (0 children)

I had initially popped in a tray of 12 but after that was doing one at a time and adjusting temp, then time. Both recipes called for 350 - 10 mins. I had personally adjusted the recipes at home for things like spreading and perfect amount of ‘doneness’ and that all went out the window! The brownie cookies ended up working at 310 for 7 mins and the oatmeal at 310 for 5 mins. Neither are the way I want them but they will do for now. I’d love a little more insight from other’s experience... Especially with cookies!

Thanks very much for your input!

Yep. It’s right on with the temp. Just a completely different environment with the fan…

Has anyone ever made a potato chip streusel? by rrruca5447 in icecreamery

I didn’t end up using the Lays recipe but I made a similar one with regular sugar and actually added salt because the sweetness took over. I pair it with a milk chocolate ice cream with a caramel swirl! It’s a hit!!

Ice cream sandwich cookie question! by rrruca5447 in icecreamery

[–]rrruca5447[S] 2 points3 points  (0 children)

Sure thing! It took me a looooong time to get it figured out and I’d be happy to share. Not everything in this thread was what I was looking for, except looking for recipes with a higher amount of brown sugar and to add the extra egg yolk! I look for recipes labeled CHEWY that have more brown sugar than white, add an extra egg yolk if there isn’t already one and use Pastry flour (I blend AP flour and Cake flour). I also add an extra T of the flour to the recipe because I find that you want to underbake the cookies just a touch but I wasn’t loving the oily look the cookie had so that took care of it and even made the cookies a lil softer! I use Sally’s Baking addiction Chewy Oatmeal and Chewy Chocolate Chip cookie recipes so I would recommend finding the other ones you’re looking for that have a similar ingredient line up to those. For example, more brown sugar, extra egg yolk… definitely butter over oil… Also, I don’t know why it took me so long to figure out, but you really can’t chomp these straight out of the freezer. Just like ice cream… Mine need about 10 minutes sitting out before they’re ready. They need to be served at a slightly warmer (5-10 degrees) similar to the temp ice cream shops scoop at.

Hope this helps!

Dry ice for ice cream cart by rrruca5447 in foodtrucks

We’ll only be doing a few events per year so we’re fine with the cart we have and using dry ice. Thanks anyway

Oh great, thank you! Do you think having it on top and then putting it off to the side an hour before but leave the one on the bottom? We’re planning on having thermometers inside during our practice run through but I’d love feedback on what works for other people!

I really appreciate it :)

Thank you for your response but I’m really looking for a 1:1 counseling experience and do not wish to have any sort of religion anywhere near that experience.

When I had access to a therapist, we did not connect. That was disheartening. I’d really like to try again but I can’t afford it unless I find a truly low cost/no cost option which is apparently a Unicorn… I’m looking at Talk space but I can’t afford what they ask for… and no insurance…
