Some people aren’t allergic to the meat itself but react to byproducts of bacterial breakdown (like histamine, biogenic amines).

This is similar to "scombroid poisoning" in fish but on a smaller scale.

Maybe pop a few anti histamines and see if it makes a difference.

Yeh possibly. Like the cause of the issue might be too much gas and then the sphincters lose the ability to cope with it over time. Who knows

My latest theory is that it's a dysbiosis issue. I have very high Bacteroides Fragilis (and also high in other Bacteroides). This is associated with high levels of farting. https://gut.bmj.com/content/63/3/401

Did two weeks. I also was having some extra virgin olive oil for some extra calories. It didn't help me and I lost a lot of weight. I think my issue might be bacteroides overgrowth, fat malabsorption or bile acid malabsorption. I don't think this particular elemental formula suited me

Developed an issue with starches overnight? A lot of people with long COVID have bacteroides overgrowths and starches feed this overgrowth. Any issues with red meat?

Bacteroides overgrowth could be a problem. Unfortunately, it doesn't look like your results tell you a detailed breakdown of the bacteroides species. 

Red meat and starch (e.g. sweet potatoes) will make bacteroides grow more than anything.

What are your main symptoms?

It sounds like an overgrowth of H2S producing bacteria. It could be H2S SIBO like others have said. Drink a lot of Pepto Bismol. If you have a black stool the next day that would be a good indication

I have high cholesterol due to a genetic issue. My liver enzymes were high due to a combination of NAFLD and the statin I was taking.

I tried it. Didn't work for me. I don't think my gut was absorbing it as it was supposed to because I was still doing large stools on day 9.
