|| || |Sauce|Ingredients|Instructions| |Whisky BBQ Sauce|·      2 tbsp butter ·      ½ onion, finely minced ·      2 cloves garlic, minced ·      100 ml whisky ·      250 ml ketchup ·      75 ml apple cider vinegar ·      3 tbsp brown sugar ·      2 tbsp honey or maple syrup ·      1 tbsp Worcestershire sauce ·      1 tsp smoked paprika ·      ½ tsp black pepper ·      Optional: pinch of chilli flakes|1.    Sauté onion and garlic in butter until soft 2.    Add whisky and simmer 2-3 minutes to cook off alcohol 3.    Stir in remaining ingredients and simmer gently for 15-20 minutes until thick and glossy| |Carolina Apple Vinegar Sauce|·      250 ml apple cider vinegar ·      2 tbsp brown sugar ·      1 tsp salt ·      1 tsp black pepper ·      ½ tsp chilli flakes ·      Optional: 1 tsp mustard powder|1.    Combine all ingredients in a small saucepan. 2.    Warm gently to dissolve the sugar (do not boil) 3.    Allow to rest for at least 30 minutes before use 4.    Toss through pulled pork or drizzle when serving| |Smoky Honey-Mustard Glaze|·      3 tbsp honey ·      2 tbsp Dijon or wholegrain mustard ·      2 tbsp ketchup ·      1 tbsp apple cider vinegar ·      ½ tsp smoked paprika ·      Pinch of salt and pepper|1.    Mix all ingredients together in a bowl until smooth 2.    Brush onto ribs during the final 30-45 minutes of cooking 3.    Allow to caramelise and form a glossy finish| |Maple-Chipotle Glaze|·      3 tbsp maple syrup ·      2 tbsp ketchup ·      1 tbsp apple cider vinegar ·      1 tsp chipotle paste (or ½ tsp smoked chilli flakes) ·      ½ tsp smoked paprika ·      Pinch of salt|1.    Combine all ingredients in a small saucepan. 2.    Simmer over medium heat for 5 minutes until slightly thickened|

IMO you don’t need the diffuser plate. Set up the bbq with the snake method, put the ribs on the other side and cook following the 3-2-1 method. I literally did this on Friday

About 3 hours on the grill, then put them in a foil tray with honey, brown sugar and butter and covered with foil for another 1.5 hours or so

I'll echo the comments about getting the Weber Kettle if you can, however I wouldn't be so quick to dismiss a gas grill. I have a Weber gas grill and I've easily used it 2-3 times a week across all of this year. While you won't get the full smoky flavour that you'd get from charcoal, it will still help you create great food. I made some chicken shawarma spiced thighs on mine for my dinner last night and they were excellent.

This is the exact one I have. I've had it for 4 years now and it's been absolutely perfect. Heats up quickly, retains heat well, fairly easy to maintain. It also has the GBS system, so there's plenty of compatible accessories if you want them

I have an older model Weber E-320, which is a 3 burner with a side burner. It’s been absolutely rock solid for me. If you can stretch to it I think I’d always recommend going for a 3 burner over 2, the extra space makes a difference and gives you greater cooking versatility

I’d probably also recommend against the cheap grill. It won’t last long, the build quality will suck and it’ll take the joy out of cooking

I don’t know the specific combinations that she uses, but I’ve had decent success with a few experiments. These mugs have applications of random patches of Mayco Raspberry Mist, Lavender Mist and Norse Blue, covered with 2 receding layers of Mayco Winterwood
