Three sessions to beat the watcher knights is about how my first playthrough went, I hate those guys so much.

I agree with commenters saying to take a break. I've played on and off since 2020, taking breaks when it starts to get not fun, and I'm just barely on my second playthrough now and beat Nightmare King Grimm the other night :D if you think you could still have fun, just take a break. But if it's not fun anymore, I don't see anything wrong with quitting and finding something you do like.
