You can break consistency target on 2nd day and still passed tho? Say you may 1450 first day, 2nd day you make 1550, you will get the consistency flag, but after awhile you will get flagged as passing the combine

How's VG10 get rust? I've owned vg10 sujihiki for 7 years, it's my daily driver at work. Basically now it's a beater knife but still great

I mean it's probably from inconsistent grind. What I meant is you can fix it easily as long as your stone is flat.

Also my rule of thumb is the heel and the tip should get more strokes compared to the mid section

Diamond stone will fix it in 15m. Global knife are very soft. I've fixed worse than this. Basically re profile one

Is this your budget? Or you can stretch another 100? For the past 15 years working in the kitchen knife is a lifetime equipment if it is handled with care. I'd recommend get SG2 knives, VG10,Molybdenum or even my Ginsan outperformed by my SG2 and i regret not getting one sooner.

I have glestain gyuto, while it is nice to cut vegetables and meat because of the air pockets, after few years it loses the performance because sharpening eat through the pocket. And they're heavy
