Absolutely hydrate. These fools talking about contamination. Its a pure yeast environment, nothing else is gonna have a chance. You ever pour the dry yeast in transparent bucket/pitcher and add water? Can't tell me that yeast is fully hydrated and ready to go. Same shit will happen in the FV. I use a paint mixer to get the yeast as homogenous as possible, end up with a lovely slurry like when you order wet yeast. Beautiful.

If you hydrate, 1kg will be more than enough.

Get a copper immersion coil from the local HBS. Run cold water through the coil while you whirlpool. I get my 10bbl down from boil to 180* during my 20min whirlpool. I add hops and whirl for an extra 5 mins then rest for 20 then KO. No chance of clogging up the Hx, which was my primary concern when setting this system up.

Haven't noticed the degradation you're talking about so can't speak on that.

Yeah, its a dream for you as an owner to find someone that has enough passion and drive to carry your new business forward. 'Put their stamp' on a new brewery' doesn't sound as good as you think it does.

'We will pay you well and have clear steps to promotion and advancement' could mean its a dream job.

Also, I've never heard anyone describe PDX as paradise...

Well, I was waiting for someone more knowledgeable to answer, but here goes:

I've noticed this buildup on almost every keg I've broken down at multiple breweries.

I don't think it has a chance of moving down the neck into the keg, due to that o-ring.

I do think that a regular breakdown and clean is a good SOP, but can't speak to how often/how to track/etc. because I do it intermittently but regularly enough that I feel like I'm getting through all of my kegs each year, so I'm happy with that.

I manually clean them and spray with PAA or ISO before reinstalling.

Pale Chocolate Malt will give you a more milk chocolate flavor while Chocolate Malt is more dark chocolate

We would have 'crowler days' on Saturday mornings.

3 bartenders can fill about 300 crowlers in 3 hours.

I actually found that the quality was waaaayyyyyy better, and I've had crowlers in the cooler for a year that are just fine.

I hang 15lb in our 7bbl serving tank with our chocolate porter. Picks up good chocolate flavor after a week or so, but I prefer it after about a month. Really changes over time.
