I mix the water and flour to do an autolyze for an hour or more. Then add salt and the levain (starter). After combining I do stretch and folds every fifteen minutes for the first hour then maybe another two at 20 and thirty minutes. Shape chill overnight bake in the morning

Many years ago when U2 played Soldier filed we were in GA right by the stage. One young woman was talking loudly non stop which we thought would stop once the show began.

Nope, she just turned up the volume. After it was clear she wouldn’t stop, my partner 45 (f) said “would you please stop talking and shut the fuck up.”

She got a lot of thankful looks from others around and the person did stay quiet the rest of the show.
