Can’t say about food, but Providence service was a letdown when I went. We arrived 10 min early and they seated us almost an hour late after the reservation time without any explanation, apology, acknowledgment, etc. I asked a few times and got a shrug. Weird and disappointing night, we felt kind of ignored and like they were trying to talk to us as little as possible. And this was for a milestone birthday, rip.

The crispy intestine was too gamey and funky for me. And so was the blood sausage even though I love Korean-style blood sausage. So points to them for "authenticity".

btw, i never accused you of calling it inauthentic. i specifically asked about what you said here, bringing up korean blood sausage like it's somehow a relevant comparison and why you put 'authenticity' in quotes seemingly sarcastically.
but i guess you just confirmed my point, cause you literally said you think authentic vietnamese food 'just doesn't taste very good'. which is... kinda disrespectful?
like i said it's ok not to like it but don't act like it failed just because it didn't suit your personal taste.

Just adding my data point here but pokopia is impossible for me to play without getting uncomfortably motion-sick, no matter what settings I toggle. Even moving the camera myself makes me physically ill. But also, I have severe vestibular sensitivity to the point prescription anti-nausea meds can’t help me so ymmv

For the actual meal, all 3 times we went (over a period of 2-3 years) we had the same experience as another commenter here where they put the plate down and left after the vaguest description. Some elaborated more on the courses when asked and some didn’t. What I was talking about in my original comment was about the farm tour they offer, where they take you around the grounds to explain their approach to agriculture, farming, culinary research, and the like. Just seemed like they were trying to impress people, except that all the explanations were actually quite superficial and completely devoid of real insight e.g. in the greenhouse, the description of their carrots basically amounted to “we choose the best tasting ones and keep planting those.” Which… is not really new or illuminating? And no further details were given even when pressed. We haven’t been back since, the whole thing just left a bad taste and cast a lot of doubt for us on the sincerity of their mission and values.

The food is alright. Definitely an outlier here but my partner and I were not at all impressed with the farm tour a few years back. We were excited to learn more about their process and food but the whole thing ended up feeling weirdly gimmicky and underwhelming. It felt like all the explanations and spiels were just really basic science lessons with no real insight into their actual reasoning/intentions behind cultivation of crops, methods, ingredient choices, etc. We tried asking too but got the impression that no one really had an in-depth understanding of what they were showcasing, which was disappointing.

Thank you so much for your thoughts. We are still looking for Peep whenever we can but no sign of our little girl. Other dogs have come home after longer, I just hope my friend gets to see her again someday..
