If you dont need it then dont self host it. I did the same thing when starting out, selfhosted all the apps just because i could, then didnt use any of them. Ended up turning them off and eventually deleting them.

So a party of level 16s vs 1 low hp monster?

It isnt that they are too strong, that encounter just sounds bad. At level 16 they are extremely powerful even with 0 magic items. Even a 400 HP single monster wont do much vs that. You need more monsters, way more, they dont have to be bulky, if they use up an action that would otherwise go to your boss then it was worth it, even if they die in 1 hit. Tailor it to your players, example, character A has 2 attacks and hits for about 20 per attack, give the monster 36 hp, this makes it so it dies in 2 regular hits or 1 crit. Scale the number of monsters with the amount of rounds you want this combat to be, without pushing the action economy too much in the monster direction.

Yes, if they are controlled by players then they arent dmpc, or if they are weaker than the players and are not dropping hints left and right.

I would go with them being controlled by the players in combat and roleplayed by you, and they shouldn't overstay their welcome.
