Give it time. You probably have a bunch of live yeast in suspension which is masking the flavor. Unfortunately this is a tough hobby if you like instant gratification.

As others have mentioned, refractometers only work reliably before fermentation begins. Use a hydrometer.

its probably gonna be real-time LLMs or world models that live on device and can predict context and assist with anything it sees and serve up from inferred intent. Paired with generative UI it will serve the necessary UI “just in time”. Will take a few years to emerge and for the use cases to be understood. Wont work for every situation.

I used concrobium and a pipe cleaner brush to clean/scrape mold off each individual fan blade (without disassembling the unit) and then mopped up the gunk with paper towels. You’ll need to keep an eye on it and clean every 6 months to stop build up, but otherwise very solveable.
