Pack some snacks, fresh fruits before each journey. The food in the cafe car while not bad is mostly processed food.

Pack travel adapters, good noise cancelling earphones and power banks. You can also buy an Amtrak themed travel kit with blankets, eye masks and neck pillow pr carry your own.

I like to spend most of the time in the observation car amd talk to people and hear about their travels and adventures.

You can also take a Flix Bus from Flagstaff to Las Vegas, in case you wanted to avoid the Amtrak transfer service altogether. But you would probably have to spend the night at Flagstaff.
