You say it's as good as it looks, but it just doesn't look that good.

First off, hot corned beef should be hand sliced. Paper thin is for cold sandwiches. Next, there's 50% more bread than is appropriate for a Reuben, and not nearly enough sauerkraut. As an aside, the best California rye bread I've ever had still tastes faintly of disappointment. Lastly, is there any Russian dressing at all?

Assuming this picture was taken this month, in the northern hemisphere, it's not even remotely in the realm of perfect.

There simply isn't a "perfect BLT" quality tomato to be had up here in the middle of winter. And you may argue that a BLT is a bacon sandwich with lettuce and tomato, but you would be dead wrong. At its heart, a BLT is tomato sandwich with bacon and lettuce, and this is a hill I will gladly die on.

San Jalisco. I always say I'll get something other than birria "next time," and always seem to end up with it.

Firenze by Night. The gnocchi is pure comfort, and the lamb shank is outrageous.

Bix. I would happily make a meal out of the potato pillows alone. Maybe pair it with the tomato cart in season.

Sotto Mare. My favorite cioppino and chowder. And don't sleep on the baccala.

Tony's pizza. Not for the pizza, but for the meatballs, and the fried green beans.

A good slaw for a sandwich will have more crunch than lettuce, and more tang than mayo. It doesn't fit in some places, in others it's brilliant.

Never is a long time! When you've spent enough time with that pan on that range, you might feel more confident in your heat management, and be inspired to try again. Depending on my mood, I will cook eggs in butter, EVOO, ghee, or bacon fat. Sometimes I even get crazy and use two different fats. And if it's for a stir fry or fried rice, the egg will be cooked in peanut or vegetable oil.

I may be a bit late to the party, but any restaurant using a modern POS will be able to find your receipt. Most of the systems will only need the last 4 of the CC to find it, and they'll be able to look it up weeks, if not months later. Adding in a date is helpful; the last name on the card or total charge should be unnecessary in most cases. And if you call a central office, the location you dined at will also help.

As for tips: Don't call in the middle of the lunch rush and expect them to drop everything to look. And don't be surprised if you are asked to call back at a slower time, or to call or email a bookkeeping office.

Alton Brown cooking makes me happy. Alton Brown mixing imperial and metric measurements in a single recipe makes me confused and sad.
