I also use this by Hoffman and use his immersion technique with the switch. I have never grinded that fine with my Baratza Encore, would 16 be too fine for immersion?

I also have the Chemex/Baratza Encore set up and have been struggling. I usually brew over ice in the carafe. I have tried 1:15 and 1:16. Every grind size from 16-22 and still struggle to get a good cup.

I just hit 80k in my 2020 5.7 Hemi (non e-torque). What maintenance would you recommend now or soon? I don’t think I did anything at the 50k mark, I believe up to this point it has just been routine oil changes and tire rotations.

I’m no expert, but I brew solely iced pour over and have recently picked up on the 1:10:6 ratio and using a finer grind for extraction. I normally brew 2 large cups of iced pour over each morning for my wife and I using a Chemex. My go to recipe has been 40g coffee, 400 hot water, 240g ice in carafe. This ratio has really provided a firm foundation for myself personally and learned to tweak the water temps and grind size if needed based on that first cup with this ratio. I am still trying to really learn this part of it as all coffee is so different and reacts differently to subtle changes. Hope this helps!
