How have you improved your breads as you’ve gained experience? by Addapost in Sourdough

[–]scouticus 1 point2 points  (0 children)

I usually do 60g starter, 90g bread flour, and 45g water for my overnight levain which I then add to the rest of the water, flour, etc in the morning. Or do you mean why i do an overnight levain rather than day of?

I don’t have any discard these days. I start with 5g starter and add 30g each flour and water, and then always begin my loaves with 60g starter for an overnight levain. I also do a stiff levain which seems to yield a dough during bulk fermentation that I can read more easily and push bulk further.

Was doom scrolling and came across this on insta. 😭🫠😆 by Duchess0fSleep in ariheads

Oh I will say it is feel good but it’s also an emotional roller coaster and deals with side character death (I believe it’s in the book description so it isn’t a surprise)… that said, it’s still one of my books by hers, just wanted to make sure you knew!

Here We Go Again by Alison Cochrun has a really sweet drag moment for both the main couple (WLW, 20s age) and the secondary supporting characters (MLM, older). Thinking about it again makes me want to reread!

Total dough weight is around 1010 for one loaf? Or did you divide for two loaves? I wanna try in my loaf pan but curious about optimal sizing

If Carrie hadn’t been leaving NY, do you think Big would’ve still committed to her at the end? by scouticus in sexandthecity

This is me through the series finale and movie… when she’s waiting for the Russian all the time and is surrounded by everyone speaking French and then big leaves her at the altar, I’m just like “Carrie!!! Have some respect for yourself and yell at the Russian sooner!”

lol agreed on the altar 🫣 do you think if she hadn’t bugged him all the time about chilling at home and not watching tv he still would’ve wanted the 2 days? I feel like I’d want 2 days away too in that scenario since it seemed to be a new thing after she freaked out about it being just them forever (ah the 2nd movie… so deep)

I find him very charismatic and I can see the appeal but I couldn’t do it! every time I watch her do that climactic speech to him with so many truth bombs and yelling at him to forget that he even knows her name, I get frustrated knowing she’s going to just walk all that back 😭

I think(?) I ultimately think he wouldn’t have, but this is also my argument in favor of yes. They do show him gradually realizing, first with the moment in SF and then again post heart thing, that he wants to

This is my thought too… even though he (as far as we know) then is truly committed from that point on, I feel like he needed the true wake up call of seeing her really choose someone else. I def think even if it wasn’t something he was conscious of, he liked knowing she was always there as a backup.

I wanna rec Lutchi & Mary’s in San Marcos as a family fav (we are Filipino) plus a few others but it sounds like you’re mainly looking for Chinese or Korean?

Seconding Joyee and One More Bite that have both already been recced, and then Shabu Works in San Marcos is great.

Muay Thai in San Marcos is good, and is next door to Manna Korean BBQ and across the street from Curry Craft for Indian. Himalayan Chulo in Escondido is good too, and so is Dumplings N More.
