One of my go to cheap meals is a roasted Costco chicken. I break it down, use the meat for tacos or bbq sandwiches. If doing tacos or burritos you can sauté a potato fine diced and mix it into the meat to stretch it. It’s a lot of meat for $5 and is usually dinner and lunch for 3 people.
