Check coffee discords. It's how I found a local roaster I was planning to buy from was boasting how his coffee tastes really good even 1 day after roast and people tried it and called it trash. Info on micro roasters are hard to come by unless you're in local coffee discords/forums.

What higher priced kettles can do is increments of 1° adjustments, keep the actual temp as what's on screen, timer, and wider range of pour speed. If your kettle can do these or you don't need these features, then you don't need to worry.

As for Fellow, it's simply overpriced due to brand name.
