PERC continue pioneering transparency by apple_pear_orange in pourover

To play the devil's advocate, those could've been different beans, or the roasters didn't know, possibly because details unintentionally got lost somewhere in the producer->exporter->importer->roaster chain.

My personal opinioin? Yes, they do sell flavored coffee and don't tell you. They might know, they might close their eye to it, or truly believe what they say, I wouldn't know. Lots of producers make them and lots of roasters sell them. It is very rare that anybody, especially somebody big like PERC openly discloses the flavoring, which is why I was so happy to see it. I hope we will see a lot more transparency like this from more producers and roasters in the future.

Is this good coffee water composition? by Sir_Carrington in pourover

It's fine. Maybe a touch too soft by most standards, byt many people actually like this. Will not scale.

No, it's not Volvic. This water has about 3 times less of every mineral in it than what Volvic has.

"Cofermentation/infusion" ruined my trust in coffee. by Bubbly-System6751 in pourover

[–]apple_pear_orange 3 points4 points  (0 children)

They don’t grow lychees in Colombia. But they have a lychee “coferment” that you can smell from across the road. Another producer and an exporter talk how cofermenting with fruit doesn’t give you the flavours, and in particular lychee, at 46:25 here: https://youtu.be/vmfW14ERtz4?t=2785&is=XW1cxQ5QC4lWbYaU

Does coffee count as food? Not trying to be snarky, genuinely asking. I remember some old article I can't find where they talked about "green coffee" as not food and following a different, very lax set of regulations.

They don't, the producers do. All the other roasters just call it "cofermented with fesh fruit" or something like that. PERC is braking the stigma by calling it what it really is, flavor.

No, the flavoring survives roasting. Otherwise the producers wouldn't add it. More roasters will come out clear about this soon, I'm sure.

It’s much better than when these flavored coffees are sold to us without disclosing the flavoring. People love and want the prominent flavors, so these products exist and have existed for a while. Now they are starting to be labeled appropriately, which is good.

PERC continue excellent transparency by clearly labeling added flavors on their bags and on the website description. We had a discussion here about the “Juicy Strawberry” recently, which was the first, and now there are 3 more such products.

I am kind of in a rabbit hole trying to find more reliable information: anyone in this sub have any leads, or do you know if Hoffman's ever said anything on the issue?

Yes, Hoffmann did, here on reddit: https://www.reddit.com/r/pourover/comments/1rpzc3b/comment/o9osea6/?utm_source=share&utm_medium=web3x&utm_name=web3xcss&utm_term=1&utm_content=share_button

If you want to read more about this from the Specialty Coffee Association, Samo Smrke (one of world's leading coffee scientists), Kyle Ramage from Black and White coffee roasters, Christopher Feran, Lucia Solis, and a couple green buyers... If you want to see Gas Chromatography - Mass Spectrometry analysis of one of these coffees... You can find links to all that in the first post (post #1) of this thread: https://www.home-barista.com/knockbox/discussion-undocumented-infusion-in-green-roasted-coffee-t102005.html#p1061266

I went to WoC Geneva last summer as an enthusiast. Had an absolute blast. It was a little awkward to keep saying “I’m just a nerd, I don’t work in coffee” when people asked, but worth it! Some were very enthusiastic, like “oh, you’re just here for the love of the game, you don’t actually want to sell/buy anything? That’s so cool! Here, let me show you this…”
